1/4 cup of whole milk

1/2 blueberry puree

1/4 teaspoon of salt

1 cup of unsalted butter (2 sticks) ( leave in room temperature)

1 1/2 Cups of Sugar

*We did not use any blackberries or blueberries for this recipe. This is just the original recipe . We will instead have a substitute instead.

Lulu Cupcakes
Step 1: Microwave 8 ounces of fresh blackberries for 30 seconds.
Step 4: Gradually add 5 cups of sugar as you mix the rest of the ingredients.
Step 3: Measure ¼ a cup of the puree.
Step 2: Pour the blackberries into a sieve and mash them into a bowl.
Step 5: Put the frosting in a plastic bag with a tip or a piping bag.
Step 6: Measure half a cup for the recipe.
Step 7: Start alternating between mixing the wet ingredients and dry ones. Do this until all your mixtures are gone.
Step 8: Take a tablespoon scoop and take two scoops for one cupcake. You want it to be ⅔ full.

Blackberry Buttercream Frosting Ingredients
*To Make Blackberry Puree:

1 cup softened butter
-
1 1/4 cup strained blackberry puree
-
1 teaspoon of vanilla extract
-
1 Tbsp lemon zest
-
5 cups confectioners sugar
-
pinch of salt
*To Make Blackberry Buttercream Frosting:
Step 1: Grate the lemon into a bowl.
Step 2: Beat 1 cup of butter in a mixing bowl.
Step 3: Add the lemon zest and the blackberry puree into the mixing bowl.
To Make Blackberry Puree:
Step 1: Take 1 pound of fresh blueberries and pour it into a medium saucepan.
Step 2: Boil the berries with a wooden spoon until it turns into a liquid form.
Step 3: Turn the heat to low once the blueberries start to boil and then let simmer for 40 minutes.
Step 4: After it has simmered, take the blueberry mixture and pour it into a blender, then blend for a few seconds.
Step 5: Pour the blueberries through a sieve into a bowl to get smooth puree.
Steps To Make Cupcakes:
Step 1: Cream your Butter and Sugar in the Stand mixer. Whip it together until it's nice and fluffy. Put the speed of the mixer at four.
Step 2: Add ingredients into the mix one at a time.
Step 3: Sift your flour into one of the bowls.
Step 4: Add in baking soda and salt.
Step 5: Mix it all together with a whisk.
Step 6: Mix together whole milk, blueberry puree, and vanilla extract.
Step 9: Heat your oven to 350° and bake for about 18 minutes.
Step 9: Decorate your cupcakes and enjoy!
